Lamb Rack with Pistachio Dukkah

When Lucy is home this is what she always requests.

Ingredients

·         1½ tbs plain flour

·         2 eggs

·         2 x 8-cutlet racks of lamb

·         1 pkt Pistachio Dukkah

Method:

Preheat oven to 200°C. Place flour and dukkah on separate plates. Lightly beat eggs in a shallow dish. Coat lamb in flour, dip in egg, allowing excess to drip away. Coat in dukkah, pressing on with fingertips. Place in a lightly greased roasting pan.

 Roast lamb for 25 minutes for medium or until cooked to your liking. Cover with foil to keep warm. Allow to rest for 5 minutes. Cut lamb rack into cutlets. Serve with salad or your favorite vegetables.
