Pistachio Dressing

Next time you are tossing salad or grilling chicken or fish, try this easy and tasty Pistachio Dressing.
You will not be disappointed!
Ingredients:
- ¼ cup roasted Murrungundy Pistachio Kernels (roast in a medium-high oven on baking paper for 4 minutes take out shake and return for a further 5 minutes and then cool) 
- 1 shallot chopped 
- 2 cloves of garlic finely chopped 
- Juice of one lemon 
- ½ teaspoon of grated lemon rind 
- ¼ cup vinegar 
- 1 tablespoon Thai sweet red chili sauce 
- ½ cup hot water 
- ½ cup extra virgin olive oil 
Directions:
Place all the ingredients in a blender or food processor to combine.
Store in a screw top jar and then just add to your favorite salad, a dressing for chicken or fish
